Curry Chicken Salad
Summer might have packed her little overnight bag and left, but that doesn’t mean that our favorite summer dishes have to get on the midnight train to Georgia with her. Allow me to introduce you to Curry Chicken Salad. I first discovered this delightful dish while working for a German restaurant a few years ago and overtime added my own spin to it. Whether you put it on a sandwich or pair it with a nice garden salad, it’s a fun, simple, and delicious must have.
Now to answer your first question: yes this recipe does have raisins in it…just trust the process and judge yo mama not me! The raisins help add a sweet crunchiness to the dish, along with the fresh celery. Of course the main character in this Curry Chicken salad is none other than curry powder. When adding the star of show, I usually like to wait for my ancestors to tell me when to stop. Now I know that this is probably not the most helpful to you, so the only way I can describe the amount is when the color in the picture above is reached, this is at least 4 tablespoons.
If Beyonce’s internet has taught me anything, its finding different and easier ways to do basic things. For a long time I was shredding chicken by hand (it was giving very much, Little House in the Prairie). This was until I discovered an IG post where they used a blender to shred the chicken, which was a true time saver. To also save time, I use a rotisserie chicken from my local grocery store. Curry Chicken Salad
Ingredients:
1 Rotisserie Chicken, shredded
2 Roma Tomatoes, diced
3 individual pieces of celery, diced
Raisins (I used 12 mini boxes as pictured above)
1 Cup of Mayonnaise
Curry Powder
Adobo
Garlic Powder
Onion Powder
Black Pepper
Instructions:
In a large bowl, combine shredded chicken, diced tomatoes, diced celery, and raisins. Mix ingredients together.
(Optional: I like to add a little of the seasonings to the dry mix.)
Add mayo, I usually use 1 cup of mayo but if you like your chicken salad a little….wetter, then feel free to add more mayo.
Once you’ve reached your desired level of mayo wetness, add your seasonings. As I mentioned in the earlier paragraph, when it comes to the curry powder, I like to reach a certain color (pictured above), usually until the ancestors tell me, “Enough my child.”
